Pumpkin Bread

Ingredients:
-3/4 cup of pumpkin puree
-1 1/2 cups of flour (for Gluten Free, I like to use King Arthur)
-3/4 cup of sugar
-1/2 cup of softened butter
-1/4 cup of chia seeds
-1/4 cup of ground flax seeds
-1 egg (for Vegan, soak the chia seeds in water and they will act as your egg)
-1 tsp of vanilla
-1 tsp of salt
-1 tsp of baking soda
-1 tsp of cinnamon
-1/4 tsp of pumpkin spice
Directions:
Set oven to 325. Combine all ingredients together. In a well-oiled loaf pan, dust the pan with cinnamon sugar (creates a wonderful crust). Pour in your batter. Bake for 45-55 minutes (use the good ole toothpick trick to ensure your bread is fully cooked. Light a candle, make some tea/coffee, and enjoy that delightful pumpkin bread you just made!
